Last night we returned home from our Las Vegas road trip, but surprisingly we’re not feeling the least bit sluggish. I am ready to get this show on the road!
People often ask, what do you eat when you travel? Well, we eat what we would normally eat when we are at home (with a few adjustments here and there). We try not to view this as a challenge, because most places we travel have a variety of options, such as grocery stores and restaurants. I also pack some of our staple snack items for the car ride, which I’ll note in a different post.
I am compelled to report back on one particular restaurant we tried while in Las Vegas – Panevino. If you hadn’t already guessed, it’s an Italian restaurant. They have a specific Plant-Based menu, which is unheard of unless you are eating at a restaurant that specializes in this variety of food. As we were getting ready to leave I was approached by the restaurant’s general manager, who turns out to be Plant-Based Nutrition Certified & Educator. He was excited to share his information with me, since not often do you stumble across people versed in plant based nutrition. I will definitely keep in touch with the kind individual, and we will be returning to Panevino the next time we visit Vegas.
Some of the items we tried include:
- Warm Artisan Bread – a MUST, it was a delicious treat! Large enough for the table to share, there were four adults and two toddlers
My husband and I shared these dishes, and both were equally delicious. I’m not even a big mushroom fan (hey, I’m trying), but the creamy mushroom sause had great flavor!
- Vincenzo’s Organic “Ricotta” & Spinach Ravioli
- Vincenzo’s GF Organic Quinoa Shells & Creamy Mushroom Sauce
Dessert (I couldn’t resist!):
- Chocolate Gelato & Almond Milk – another tasty treat!
